we have experienced a reduction in our dietary diversity. By ignoring the huge variety of wild seeds, nuts, fruits, berries, edible roots, tubers, fungi and hedgerow salads our diets have narrowed to utilise foodstuffs available only through cultivation and farming. Through the centuries the wild food larder has always been with us, but our knowledge of how to identify, harvest and prepare these natural products is slowly fading.

Backwoods/trail cookery is a fundamental part of wilderness bushcraft.
Using a myriad of native and traditional cookery techniques, that can be adapted and applied to your own circumstances, we will take time out from the hectic pace of modern living to enjoy the time honoured and rewarding activities of foraging and cooking in the open air.


We offer Two separate seasonal courses –

Spring Forager & Autumn Harvest

On both courses you will learn about health, safety and hygiene in the backwoods kitchen. How to manage fires for cooking and make improvised ovens for baking.
